James O’Reilly, CEO of Smokey Bones, and James Walker, senior vice president, restaurants for Nathan’s Famous, will lead a seminar looking at the presence of ghost kitchens in today’s restaurant industry. O’Reilly and Walker will take a look at their own ghost kitchen models and teach seminar guests if their brands are ideal candidates for the ghost kitchen phenomenon.
